Buffalo Chicken Roll-Up Recipe

After a long day at work, the last thing you want to do is make a complicated diner. I really like dinners that I can make in under an hour. One of my favorites to make is buffalo chicken roll-ups. This dish is great with mac and cheese, green beans, Rice-a-Roni, or garlic bread.

This recipe is very easy to make. The buffalo sauce and ranch dressing helps keep the chicken moist. You will need the following utensils:

  • 8″x8″ Glass Baking Dish – I use this one.
  • Coffee Cup – To melt the butter and to mix the butter and buffalo sauce. This is the one I used in the pictures below.
  • Basting Brush – I like the ones with silicone bristles like this one.
  • Cutting Board
  • Meat Thermometer – We got this one as a wedding gift and I love it.

For this recipe you will need the following ingredients:

Step 1- Preheat oven to 375F. Melt 1 tbsp of butter in the microwave. I like to melt it in a coffee cup so that I have an easy way to hold the cup when I bast the chicken.

Step 2 – Mix the butter with the 1/4 cup buffalo sauce and 1/4 tsp celery salt. Set aside once mixed together.

Step 3 – Take the thin chicken breast put a little mozzarella cheese on the top with a dollop of ranch dressing.

Step 4 – Then roll the chicken breast up and place it into an 8″x8″ baking dish that is greased with olive oil. Then bast the chicken breast roll-up with the buffalo sauce mixture.

Step 5 – Repeat for the remaining chicken breast cutlets. After basting the last roll-up, pour the remaining sauce over top all of the roll-ups in the pan. Sprinkle the remaining cheese on top of the roll-ups.

Step 6 – Bake in the oven for 35 minutes. Verify the chicken is 160F prior to eating, because if the chicken breast is on the thicker side it may take longer to cook.

  • 1.5 Lbs Chicken Breast I like to use thin cutlets because they are easy to roll
  • 1 tbsp butter
  • 1/4 tsp celery salt
  • 1/4 cup Buffalo Sauce Like Frank Red's Hot
  • 2 cups Monzorella Cheese
  • 2 tbsp olive oil
  • Ranch Dressing

Instructions
 

  • Preheat the oven to 375F.
  • Melt the butter in the microwave.
  • After melting the butter, stir in the buffalo sauce and celery salt. Set aside.
  • Take the thin chicken breast put a little mozzarella cheese on the top with a dollop of ranch dressing. Then roll the chicken breast up and place it into an 8"x8" baking dish that is greased with olive oil.
  • Using a basting brush, brush the buffalo sauce mixture on top of the roll up. Repeat until you have rolled up all the chicken breasts. Pour the remaining sauce over top all of the roll-ups in the pan. Sprinkle the remaining cheese on top of the roll-ups.
  • Bake in the oven for 35 minutes. Verify the chicken is 160F prior to eating.
